Generalities To the genus Amaranthus belong some tens of annual or perennial plants, spread all over the globe; most of the species produce lanceolate or enlarged leaves, light green in color, crossed by showy raised veins; in spring and summer, at the apex of the thin branches they produce long catkins, erect or pendulous, which contain numerous small flowers, white, greenish or red; the flowers are followed by small, roundish seeds.
